Protein packed energy bars are popular and a great way to get your kids to eat nutritiously in just a few bites. Unfortunately for our family, we have multiple food allergies that prevent us from being able to enjoy prepackaged breakfast energy bars.

I’ve been searching for an allergy-friendly recipe for our family and was excited to find a recipe from the “Weis kids’ bites” program that I could adapt.  This recipe for No-Bake Energy Bites is not only simple, but also packed with heart healthy nutrients.  That makes this mama HAPPY!

No-Bake Energy Bites

  • 1 cup old-fashioned oats
  • 1/2 creamy or crunchy Sunbutter
  • 1/2 cup ground flaxseed
  • 1/3 honey
  • 1 teaspoon pure vanilla extract
  • dark chocolate chips

Place all ingredients in a bowl and stir until they’re well combined.  Cover and refrigerate the mixture for about 30 minutes.  Chilling the mixture makes it easier to shape into round balls.  Roll the mixture into small balls and ENJOY!

In the event that there are still some energy bites leftover, you can store them in an airtight container in the refrigerator for up to one week.

If you want to add a twist to these energy bites, try one of these stir-in ideas like coconut, crunchy cereal pieces, dark chocolate chips, dried fruit, or unsalted nuts.  

If you ask me {and my toddler!}, these little bites are perfection rolled into a ball and a GREAT way to start the morning!
