I always have good intentions of using the overripe bananas, but sadly I find myself throwing them away all too often.  If there’s one thing that I really hate, it’s wasting food!  If you only have a small window of time for baking, this recipe for Banana Chocolate Chip Muffins is the one for you.  From first peel to first bite is just a shade under 30 minutes!

For this Banana Chocolate Chip Muffin recipe, you’ll need:

  • 1 ¾ cups all purpose flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 beaten egg
  • 1/2 almond milk {or dairy milk}
  • 1/4 cup cooking oil
  • 3/4 cup mashed bananas {about 2 overripe bananas!}
  • chocolate chips

Ingredients
  1. 1 3/4 cups all-purpose flour
  2. 1/3 cup sugar
  3. 2 teaspoons baking powder
  4. 1/4 teaspoon salt
  5. 1 beaten egg
  6. 1/2 cup almond milk {can substitute dairy}
  7. 1/4 cup cooking oil
  8. 3/4 cup mashed banana {about 2}
  9. chocolate chips
Instructions
  1. Preheat oven to 400 degrees.
  2. Grease twelve muffin cups {or line with paper} & set aside.
  3. In a bowl, combine flour, sugar, baking poweder, and salt. Make a well in the center of the flour mixture and set aside.
  4. In a separate bowl, combine the beaten egg, almond milk, cooking oil, and bananas. Then add the wet mixture all at once into the dry ingredient mixture and mix until moistened. The batter will look very lumpy.
  5. Fold in desired amount of chocolate chips.
  6. Spoon batter into the prepared muffin cups and bake for 18 minutes or until a toothpick comes out clean.
  7. Cool in muffin cups on a wire rack for about five minutes and then serve warm!
